Happy St. Patricks day!
Today usually leads to eating and drinking, of all things green. Now, I am totally on board with the eating of the green as long as it is the healthy green. When I was growing up my Irish mother always made a special meal of Corned beef and cabbage and some special green dessert. The celebration of food and families gathering together is such an important part of our health and just because you may be trying to eat less refined sugar or cut down on carbs in your diet does not mean that you cannot celebrate.
Here are my recommendations for a healthy St. Patrick’s day meal:
